Gluten-Free Apple Crisp

I just made this the other day for thanksgiving for a quick, but kinda healthy dessert!

Ingredients:

5 Fresh,  Honeycrisp Apples (peeled, cored, and sliced)

1.5 cup gluten-free rolled oats

1 cup organic brown rice flour

5 tbsp unsalted butter (melted)

1 cup brown sugar, plus a little extra :)

2 tsp cinnamon

1/2 tsp nutmeg

lemon juice

Caramel topping ( I like smuckers, or melted caramels)

 

Preparation:

  • toss the sliced apples in the lemon juice, and then in a little bit of brown sugar. Set aside.
  • Take half of the rolled oats and put them through a coffee grinder until they are small grains.
  • In a mixing bowl, combine brown rice flour, ground oats, brown sugar, rolled oats, cinnamon and nutmeg. Using a fork, mix together. Add melted butter and mix until crumbly.
  • In a glass pan, pat a  layer of the flour and oat mixture (you will use about half of the mix). Once patted down, cover with the sliced apples.
  • Add the rest of the mixture over the apples, evenly coating the whole pan. Grab a handful of brown sugar and sprinkle that over the pan as well.
  • Bake at 350 degrees for 15-20 minutes. (until the apples are soft)
  • Once removed from the oven, drizzle caramel sauce over the warm apple crisp.
  • Serve with vanilla ice cream, caramel, and whipped cream :)
